I live in a nation that experienced 220% inflation in 12 months. there needs to be a way to consider the value of a currency in comparison with a major currency or commodity. US tax rules require conversation of price to value of the dollar.

Do you mean switching currencies when creating transactions?
When you create a transaction, it automatically has currency of the account in which you create the transaction.
