What do you mean by "a version for Non-Profits"?
Are you talking about account templates?
The problem there is, they are country specific because every government has its own specific rules.
If you run
LANG=de_DE.utf8 gnucash
in File->New you can choose
"Kontenrahmen SKR49 für Vereine, Stiftungen, gGmbHs".
That would be applicable for non profit organizations in Germany.

So here we rely on volunteers researching the rules required by their government, CPA associations, ...
