Add an IOS app for the Apple Iphone / Ipad users which can sync with the desktop version of GNU cash.
Porting GnuCash to any mobile device is beyond the scope of this project. There is a project that provides a data collection app on Android https://github.com/codinguser/gnucash-android but that is project separate from gnucash. Someone who wants to write an iphone app will have to do this similarly in a separate project. Sorry.

This is not a suggestion to port, bur rather a sync-able app, such as for data entry on-the-go...

There already exists an App for Android that allows you to record your spending and export these as ofx. Then they can be import to your usual desktop GnuCash.

Just a small terminology precision, free-ware is not free software. Free-ware is about price, free software is about freedom. GNUcash is Free Software.

not need to be on cloud. Simply Sync over wifi or similar.

Umm... I'm not sure putting financial data in "the cloud" is such a great idea. I wouldn't even touch my banking on a smart phone / tablet / iPad because I don't control the OS, so I have no way of taking safeguards against snooping, malware, etc. Then there's the whole issue of whose "cloud" servers would host the data -- I would hope that with something like banking, the only options under consideration would be the bank or your home computer (and properly securing the latter is probably not something most users should attempt).
Mind you, I'm speaking from a North American perspective here: Our banks have no security whatsoever; if you know someone's account number you can do whatever you want with their money. Yes it's illegal and yes it eventually tends to get sorted out when someone messes with an account like that, but it's all after-the-fact security. In other countries, I imagine things are a bit more sane and leaking account numbers through iDevice malware/spyware might not be as much of an issue.

It would be great to have a "cloud" version of GnuCash which could be accessed through other devices (iPhone or others) besides the desktop application.

Just to add on my above, when I mean Apps, I am referring to iPhone/iPad Apps, Samsung Apps, Apps for smartphones. And I find this idea brilliant in the sense of cost, it will be low, in the sense of usability, it'll be convenient and simple. Won't you guys consider it?
